GLUTEN FREE RECIPES!
We have been gluten free for a year and a half. And if you found out, like we did, that the packaged mixes and pre-made gluten free food is less than wonderful. Maybe we can help! My husband is gluten intolerant, I can not eat free glutamic acid (MSG). Our options are very limited. We have good friends who are Celiac and they rave about what I have been cooking. I would like to share some of my gluten and MSG free recipes with you!

GLUTEN-FREE FLOUR MIX
2 Cups Brown Rice Flour
2/3 Cup Potato Starch
1/3 Cup Tapioca Flour
¼ teaspoon Xanthan Gum
WONDERFUL GLUTEN-FREE MUFFINS
(Directions for Blueberry and Banana/Cranberry)
MIX
1 ¾ Cup Flour Mix (above)
¼ teaspoon Xanthan Gum
¼ Cup Yellow Cornmeal
¼ teaspoon Salt
¼ teaspoon Cinnamon
SET ASIDE
CREAM
½ Stick Butter
¾ Cup Sugar
BEAT IN
2 Eggs, one at a time
ADD
2 teaspoon Gluten Free Baking Powder
MIX WELL, ADD
1 teaspoon vanilla
1 teaspoon Lemon Juice
FOLD IN BY HAND
½ DRY MIX TO BATTER
ADD
½ Cup Milk
The Rest of the Dry Mix
1 ¼ Cup Blueberries (FOR BLUEBERRY MUFFINS)
OR
3-4 Mashed Bananas
The Rest of the Dry Mix
¼ Cup cut-up Dried Cranberries (FOR BANANA/CRANBERRY MUFFINS)
Bake in paper muffin cups at 375 degrees for 25 – 30 minutes
Makes 12 Muffins
YUMMY GLUTEN-FREE BROWNIES
MELT IN MED PAN
½ Cup Butter
ADD
6 Tablespoons Cocoa
2 Tablespoons Oil
1 Cup Sugar
2 Slightly Beaten Eggs
1 teaspoon Vanilla
¾ Cup Flour Mix (above)
½ Cup Chopped Walnuts (optional)
BAKE in 9" x 9" greased pan
350 degrees 30 minutes
When cool, top with frosting below.
FROSTING
MELT
2 Tablespoons Butter
ADD
1 Tablespoon Cocoa
1 Tablespoon Milk
1 Cup Powdered Sugar
¼ teaspoon Vanilla
Pinch of Cinnamon
